Cool climate Cabernet sauvignon with floral vibrancy, the palate is rich and round where berry fruits dominate, some classic leafy herbs add a savoury note and the natural acidity gives the wine life and longevity. The backbone being the Yarra Yering Cabernet sauvignon calling card.

Aroma: Blueberry and blackberry fruits interweaved with cassis and wafts of sage highlight the varietal characteristics.

Palate: Cool climate Cabernet sauvignon with floral vibrancy, the palate is rich and round where berry fruits dominate, some classic leafy herbs add a savoury note and the natural acidity gives the wine life and longevity. The backbone being the Yarra Yering Cabernet sauvignon calling card: many fine chalky tannins include grape, stalk and oak.

Hand harvested, destemmed and crushed into traditional 600kg tea chest fermenters. Fermentation initiated naturally and supplemented with a selected yeast strain to ensure completion. Hand plunged twice daily until fermentation is complete, some extended time on skins until tannins soften before basket pressing for gentle tannin extraction. Gravity filled to 100% new French oak Bordeaux shaped barrels for 20 months completing malolactic fermentation in the cool underground cellars. Bottled via gravity without filtration.

Season: 2013 growing season was close to ideal with sufficient winter and spring rainfall followed by a warm and dry growing season producing fully ripe, robust wines.

Cellaring: One for the cellar to evolve for a further 20+ years under suitable conditions.
