Sherbet aromatics with crunchy green apple and custard apple weight. The palate dominated by a citrus backbone and fleshed out with the texture of skin contact and malolactic fermentation. A jasmine tea like tannin profile with an acid tang drive like a freight train.

Aroma: Sherbet aromatics with crunchy green apple and custard apple weight.

Palate: The palate dominated by a citrus backbone and fleshed out with the texture of skin contact and malolactic fermentation.

Hand harvested and crushed to encourage skin contact which extracts flavour and lends texture to the palate. Basket pressed with short juice settling before transferring to old French oak barrels for fermentation as well as the acid softening malolactic fermentation. Bottled 11 months later while fresh, crisp and crunchy.

Varietals: A white blend of 83% Semillon and 17% Sauvignon blanc.

Region: Yarra Valley (Gruyere)

Season: 2015

Vines: 20 year old dry grown vineyard.

Cellaring: Generosity and texture make this approachable young but it will develop weight and toastiness over time with careful cellaring for 10+ years. Sealed with screwcap to ensure longevity and freshness.
