Palate: Bitter chocolate and blue fruits, a big wine but balanced with fruit and tannins to match. Bright acid will ensure its ageability and only time will tame him!
Hand harvested and destemmed and crushed into 600kg tea chest fermenters. Hand plunged twice daily until fermentation is complete. Basket pressed for gentle tannin extraction before malolactic fermentation in French oak Bordeaux shaped barrels for 20 months. Bottled via gravity without filtration.
