Dosage unknown, but there’s a whisper of sweetness. Pleasant but not overly complex. A blush to the straw hue with wild strawberries, fuji apple and some lemon butter on toast. Hand harvested and whole bunch pressed for the finest quality juice with minimal colour and phenolics. Maturation for 12 months in neutral oak barrels before it’s secondary bottle fermentation (traditional method) and resting for three years on it’s yeast lees.
