2016 Blanc de Noir

Buttery toast topped with red delicious apple, the nose creamy and bright. Imagine fresh waffles topped with freshly hulled strawberries. Creamy and textured with a bright refreshing finish.

90 Points – 2022 Halliday Wine Companion

“Pinot meunier, whole-bunch pressed. Lightly clarified juice sent to old oak for fermentation, left for 1 year before secondary fermentation in bottle and 3 years bottle aging before disgorgement. Dosage unknown, but there’s a whisper of sweetness. Pleasant but not overly complex. A blush to the straw hue with wild strawberries, fuji apple and some lemon butter on toast. Racy palate, thanks to its acidity.” – Jane Faulkner, 2022 Halliday Wine Companion.

Hand harvested and whole bunch pressed for the finest quality juice with minimal colour and phenolics. Maturation for 12 months in neutral oak barrels before it’s secondary bottle fermentation (traditional method) and resting for three years on it’s yeast lees.
