Lime juice, green apple peel and a little white flowers. Bright green apple crunch and lime citrus from the Semillon grapes, Chardonnay brings some of the stonefruit weight and a pillowy texture from maturation in neutral oak barrels. The bright lime acidity driving the palate length.

Both Semillon and Chardonnay were hand harvested, chilled in a cool rom overnight and whole bunch pressed. This gives us the finest juice with minimal phenolics or grip. Fermentation in old oak barrels lending weight and texture.
Region: Yarra Valley, Victoria, Australia.
Varietals: A white blend of 65% Semillon and 35% Chardonnay.
Vines: Fruit for this wine was sourced from a dry grown block south of Underhill Vineyard, slightly higher in elevation. A Bordeaux inspired white blend of 65% Semillon and 35% Chardonnay.
Vintage 2019: A dry Winter followed by a wet late Spring which helped with the vines with canopy growth and decent yields. January was hot and some fruit was lost to sunburn. An early start to harvest with mild conditions and the fruit ripened relatively quickly.
Cellaring: Has sufficient generosity & texture to be approachable as a young wine but will reward careful cellaring for up to 10 years.
