Blackcurrant fruits, purple plums and a cured meat char. The Shiraz brings an exotic floral fragrance coupled by a juicy expansive fruit palate and minimal tannin extraction. The Touriga naçional being naturally high in tannins brings structure and spice to the blend.
“This has an approachability similar to the Light Dry Red, so there’s no crime cracking it open now. But there’s some depth and stuffing here, allowing it to unfurl over the next few years. It starts off with lavender, pepper and new leather, plus a core of fruit, tinted with Middle Eastern spices and lightly drying, fine tannins. Whole berry fermentation was encouraged with both varieties to encourage a fleshy fruit-full palate. Gentle hand plunging twice daily for minimal tannin extraction. The individual components spent 9 months in old French oak barriques in our underground cellar before blending and bottling.
Varietals: 70% Shiraz, 30% Touriga Naçional

Vines: Shiraz sourced from the Salamenca block planted in 1995 and Touriga naçional sourced from a terraced block that sits above the Shiraz; planted in 1990 and 2013. When the 1990 planted Touriga naçional vines were planted, the land where it was grown was reclaimed form the encroaching bushland and this area was dubbed the New Territories.
Cellaring: This wine has been made with the intention to be an early drinking style of wine; fragrant, vibrant and delicious in its youth. It will continue to evolve for some years under suitable cellaring conditions however this is not required. Please drink it and enjoy it!
