All fruit was handpicked then destemmed directly to a series of 600kg fermenters. Cabernet Sauvignon was crushed to aid in the extraction of tannins, Merlot was whole berry ferment for plushness as was the Malbec. Fermentation on skins with gentle hand plunging twice a aids in the gentle extraction of colour, flavour and tactile palate components. Some post ferment maceration builds complexity into the wine. Maturation in small French oak barrels for 18 months.
A succulent, bright jubey fruit layered palate with some cardamon spice complexity and very fine, soft tannins. A bright acid energy underscores a wine of fruit purity and finesse.
Vines: Cabernet Sauvignon was planted in 1970 and again in the 2000 expansion of the vineyard with the highly aromatic SA125 clone. Excess Merlot was available post blending of our Yarra Yering wines and so we were able to utilize that here to build complexity through blending. Recent plantings of Malbec at Warramate were undertaken becasue we love what Malbec brings to our Dry Red Wine No.1 blend; a whole lot of energy!
Cellaring: Given the youthful exuberance it currently displays, it is ready for immediate enjoyment. Expect a mellow and graceful evolution up to 5 years under suitable cellaring conditions.
