The Shiraz brings an exotic floral fragrance coupled by a juicy expansive fruit palate and minimal tannin extraction. Touriga naçional being naturally high in tannins brings structure and spice to the blend. Violet perfume, juicy red fruits; berries and plums and a hint of aniseed. Fleshy, intriguing and spicy.
Whole berry fermentation was encouraged with both varieties to encourage a fleshy fruit-full palate. Gentle hand plunging twice daily for minimal tannin extraction. The individual components spent 9 months in old French oak barriques in our underground cellar before blending and bottling.
