The Shiraz brings the exotic floral fragrance and the juicy expansive fruit palate. Touriga naçional being naturally high in tannins brings structure and spice to the blend. A violet perfume lifted nose, juicy plum fruits with aniseed spice. The wine is fleshy, intriguing with plenty of spice complexity wrapped in a firm structure.
Whole berry fermentation was encouraged with both varieties to encourage a fleshy fruit-full palate. Gentle hand plunging twice daily for minimal tannin extraction. The individual components spent 9 months in old French oak barriques in our underground cellar before blending and bottling.
Varietals: 75% Shiraz 25% Touriga Naçional
Region: Yarra Valley, Victoria, Australia.
Vines: Shiraz sourced from the Salamenca block planted in 1995 and Touriga naçional sourced from a terraced block that sits above the Shiraz; planted in 1990 and 2013. When the 1990 planted Touriga naçional vines were planted, the land where it was grown was reclaimed form the encroaching bushland and this area was dubbed the New Territories.
Cellaring: This wine has been made with the intention to be an early drinking style of wine; fragrant, vibrant and delicious in its youth. It will continue to evolve for some years under suitable cellaring conditions however this is not required. Please drink it and enjoy it!
