Aroma & Bouquet: An exotic floral fragrance, boysenberry fruits, black plums and a cured meat char.
Palate: Shiraz brings a juicy expansive fruit palate and minimal tannin extraction. The Touriga Naçional, being naturally high in tannins, brings structure and spice to the blend.
Whole berry fermentation was encouraged with both varieties to encourage a fleshy fruit-full palate. Gentle hand plunging twice daily for minimal tannin extraction. The individual components spent 9 months in old French oak barriques in our underground cellar before blending and bottling.
Varietals: 55% Shiraz, 45% Touriga Naçional
Region: Yarra Valley, Victoria, Australia.
Vines: Shiraz sourced from the Salamenca block and Touriga Naçional sourced from a terraced block that sits above the Shiraz. When the original Touriga naçional vines were planted, the land where it was grown was reclaimed form the encroaching bushland and this area was dubbed the New Territories.
Cellaring: This wine has been made with the intention to be an early drinking style of wine; fragrant, generous and delicious in its youth. It will continue to evolve for some years under suitable cellaring conditions however this is not required. Please drink it and enjoy it!
Vintage 2018: A cool and wet spring and summer delayed budburst and encouraged good canopy growth and good fruit set before summer arrived and thereafter the season turned dry. Picking over a busy 6 weeks delivering grapes with generous flavour development.
